Ingredients
- 1 cup pecans, chopped
- 3/4 cup unsalted butter
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 cups old fashioned rolled oats
- 1 cup dried fruit (cranberries, cherries, strawberries, raisins) or chocolate chips
Directions
- In a bowl cream the butter and sugar until smooth. Add the egg and vanilla extract and beat to combine.
- In a separate bowl whisk together the flour, baking soda, salt and cinnamon. Add the flour mixture to the creamed mixture and beat to incorporate. Stir in the pecans, oats and dried fruit or chocolate chips.
- Roll the dough into 1 inch balls, place on a greased cooking sheet 1 inch apart and flatten the cookies slightly with your fingers.
- Bake cookies for about 12-15 minutes at 350˚F or until light golden brown around the edges.
